How Do Bees Actually Make Honey?

It takes a relay of bees, one wild enzyme, and thousands of fanning wings to turn flower nectar into honey.

A jar of honey looks simple: golden, sweet, shelf-stable for years. What it took to get there is anything but. Making honey requires a relay of dozens of bees, a body part built like a second stomach, an enzyme that rewrites sugar at the molecular level, and thousands of tiny wingbeats working as a dehumidifier. It is one of the more elaborate manufacturing processes in the animal kingdom, and it all starts with a flower.

It Starts With a Second Stomach

A forager honey bee visits flowers and sucks up nectar, a thin, sugary liquid that is roughly 70 percent water. Instead of swallowing it into her digestive stomach, she stores it in a separate internal pouch called the honey stomach, or crop, according to entomologists at NC State University. The nectar is not digested there. It is simply held in transit, unchanged, as she flies back to the hive.

Passed Mouth to Mouth

Back at the hive, the forager does not deposit her cargo into a cell herself. She regurgitates the nectar directly into the mouth of a younger worker, known as a processor or house bee, waiting near the entrance. That processor bee then carries the nectar deeper into the hive and regurgitates and re-swallows it repeatedly, passing it along a small chain of workers before it is finally deposited into a wax cell.

An Enzyme Rewrites the Sugar

Every time a bee handles that nectar, she adds a bit of saliva containing an enzyme called invertase. As David Tarpy, an entomologist at NC State University, has explained, invertase breaks the complex sugar sucrose down into two simpler sugars, glucose and fructose. That chemical split is what turns nectar into something closer to honey, and it also makes the final product harder for bacteria and fungi to use as food, one reason honey resists spoiling.

Fanning It Dry

Sweetened sugar water would still ferment if bees stopped there, so the colony’s next job is removing water. Research on foraging bees, published in Scientific Reports, found that bees begin concentrating nectar even before they get home, repeatedly exposing droplets on their mouthparts to the air inside their crop. Once nectar is in the comb, worker bees line up and fan their wings across the open cells, driving airflow that evaporates more moisture. Raw nectar’s water content, around 70 percent, has to drop below about 18.6 percent before it legally and chemically counts as honey.

Sealed for Storage

When the moisture level is low enough, worker bees cap the cell with a thin lid of fresh beeswax, sealing the honey away from humid air and contamination. A strong colony can process gallons of nectar into ripened, capped honey over a single nectar flow, all so the hive has a stable, sugar-dense food source that can carry tens of thousands of bees through winter, long after the flowers that started the whole process are gone.
